You voted on social media, and the results are in! Chocolate chip and peanut butter cookies are VASA members’ favorite cookies. The holidays are near, and that means lots of holiday baking. Try out these recipes for a yummy and healthier version of your holiday treats.

 

Two freshly baked Gluten-Free Chocolate Chip Cookies

 

Gluten-Free Chocolate Chip Cookies

Ingredients:

  • 1/2 cup melted coconut oil
  • 3/4 cup granulated sugar of choice (monk fruit, coconut)
  • 1/4 cup mashed banana
  • 2 teaspoon vanilla
  • 1 1/3 cups gluten-free flour or oat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1-3 tablespoon milk of choice (if needed)

Directions:

Preheat oven to 375 degrees and prepare a baking sheet with cooking spray.

Mix coconut oil until whipped consistency. Add in sugar, mashed banana, and vanilla and mix until combined.

Mix in flour, baking soda, baking powder, and salt until combined. Add in milk if dough is dry. Fold in chocolate chips.

Scoop cookie dough onto baking sheet and bake for 9-11 minutes. Allow cookies to set on a baking sheet and enjoy!

Peanut Butter Cookies

Ingredients:

  • 1 cup peanut butter
  • ⅔ cup coconut sugar (or monk fruit sweetener)
  • 2 teaspoon vanilla
  • 2 eggs
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup flour of your choice (we used oat flour!)
  • Optional: chocolate chips or chocolate pieces to press on top!

Directions:

Preheat oven to 350 degrees and prepare a baking sheet with cooking spray

In a small bowl combine baking soda, baking powder, salt, and flour.

In a large bowl mix together peanut butter, coconut sugar, vanilla, and eggs.

Slowly fold in the flour mixture to the large bowl until combined.

Roll dough into 1.5 inch balls and place on baking sheet. Lightly flatten cookies with a fork to create a lined pattern.

Bake for 10-11 minutes.
