When temperatures climb, fresh fruit often sounds just as good as classic summer desserts. These two recipes put a festive spin on seasonal favorites, combining bright flavors, vibrant colors, and simple ingredients for treats that are just as fun to make as they are to share.

4th of July Popsicles

INGREDIENTS

  • 3 Tbsp granulated sugar
  • 10 oz strawberries
  • 10 oz blueberries
  • 1 1/3 cup coconut milk

DIRECTION

  1. Blend the strawberries and 1 tablespoon of sugar until a smooth puree forms. Divide the puree evenly among 10 popsicle molds. Put the molds into the freezer and let it freeze for 3 hours. It should take up about 1/3 of the mold.
  2. After the strawberries mix is frozen, whisk together the coconut milk and 1 tablespoon of sugar. Take the popsicle molds out of the freezer and divide the coconut milk among the popsicle molds. Freeze for another 3 hours. The coconut milk should fill about 1/3 of the mold.
  3. Puree the blueberries and the last tablespoon of sugar. Take the molds out of the freezer and divide the puree evenly among the molds. Freeze for 3 more hours or overnight and enjoy!

Gluten Free Cookie Pizza

INGREDIENTS

Cookie Base

  • 2 cups oat flour
  • 1/2 cup almond or coconut flour
  • ¼ cup coconut sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1 egg
  • 1 1/2 tsp vanilla
  • ¼ cup butter
  • ¼ cup honey or agave 

Topping

  • 2 oz softened cream cheese
  • ½ cup cottage cheese (blended)
  • 1/2 cup vanilla Greek yogurt
  • ¼ cup honey or agave
  • 1 tsp vanilla
  • 1/4 tsp cinnamon

Fruit

  • 3/4 cup blueberries
  • 3/4 cup chopped strawberries
  • 1/2 cup raspberries
  • Optional: If you are creating a flag design, sliced bananas are a great addition.
DIRECTIONS
  1. Preheat the oven to 350 degrees and lightly grease a cookie sheet.
  2. Mix together dry ingredients, then add all wet ingredients until combined.
  3. Roll the dough into a large ball and then using a rolling pin evenly roll the dough to fit the pan.
  4. Bake for 15 minutes or until the edges are golden.
  5. While crust bakes, mix together topping ingredients in a food processor or blender.
  6. Let crust cool and frost the entire cookie.
  7. Decorate with fruit anyway you’d like! We recommend a flag pattern!
