Yummy (and Healthy) Thanksgiving Veggies

Want to try something new this year? Veggies always seem to be the last to get eaten, but not this time! These three yummy vegetable dishes are sure to be a hit with everyone. Plus, they’re a healthier spin on Thanksgiving sides. Try one or all three!

 

Roasted Seasoned Carrots

  • 2 lbs carrots of your choice (thinly sliced or into 1 inch pieces)
  • 3 tbsp olive oil
  • 2 tbsp honey or agave
  • 1 tsp minced garlic
  • 1/2 tsp thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
Directions
  1. Heat oven to 375 degrees and prepare a baking sheet with cooking spray.
  2. Chop or slice carrots.
  3. Mix olive oil, honey or agave, and seasonings in a bowl.
  4. Coat carrots and place them on the sheet in a single layer.
  5. Bake for 30 minutes or until tender flipping half-way through.

 

Roasted Parmeasan Cauliflower

  • 1 head of cauliflower
  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup grated parmeasan or tri-blend cheese (more or less to preference)
Directions
  1. Heat oven to 400 degrees and prepare a baking sheet with cooking spray.
  2. Mix together oil and spices.
  3. Chop cauliflower into floret pieces and coat in the oil mixture.
  4. Place cauliflower on the baking sheet and sprinkle with the cheese.
  5. Bake for 20-25 minutes, flipping after 15 minutes.

 

Sauteed Bacon Green Beans with Fried Onions

  • 1 lb green beans
  • 6 slices of bacon (regular or turkey)
  • 1/2 tsp olive oil
  • 2 tsp minced garlic
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup fried onions
Directions
  1. Wash and trim green beans and set aside.
  2. Cook bacon until done. Chop into small pieces and set aside.
  3. In a separate pan, over medium-high heat olive oil and minced garlic.
  4. Add the green beans to the pan with onion powder, salt, and pepper and sautee for about 8 minutes until tender, stirring often.
  5. Mix in the bacon until heated through.
  6. Top with fried onions and serve!
