Red Velvet Protein Pancakes

Valentine’s Day is right around the corner! What are you making your significant other? Red Velvet Protein Pancakes are the perfect, decadent breakfast to keep you full and fuel your muscles! Add some extra love by using a heart shape cookie cutter to form the pancakes.
PANCAKE INGREDIENTS
- 1/3 cup rolled oats
- 1 Tbsp coconut flour
- 1 scoop vanilla protein (we like Giant Performance Whey Protein, available at select VASA locations)
- 1/4 tsp baking powder
- 1 egg white
- 3 Tbsp non-fat vanilla Greek yogurt
- 4 Tbsp unsweetened vanilla almond milk
- 1/4 tsp vanilla extract
- Red food coloring
DRIZZLING SAUCE INGREDIENTS
- 3 Tbsp non-fat vanilla Greek yogurt
- 2 Tbsp fat free cottage cheese
- 1 Tbsp unsweetened vanilla almond milk
- 1 Tbsp vanilla or chocolate protein
- 2 packets Truvia or other sweetener
- Optional: Berries or 6 melted Ghirardelli 60% dark chocolate chips
INSTRUCTIONS
- In a food processor or blender combine the sauce ingredients until smooth. Set aside.
- In a food processor or blender, grind the oats into a fine powder.
- Add the rest of the pancake ingredients into the blender and mix until smooth.
- Heat a griddle or large non-stick pan over medium-low heat.
- Drop pancake batter onto the griddle and cook until the top starts to bubble, then flip and cook the other side.
- Once the pancakes are cooked, put them on a plate and drizzle the sauce over them.
