Gluten-Free Chocolate Chip Cookies
- 1/2 Cup Coconut Oil Melted
- 3/4 Cup Granulated Sugar of choice (monk fruit, coconut)
- 1/4 Cup Mashed Banana
- 2 Tsp Vanilla
- 1 1/3 Cups Gluten-Free Flour or Oat Flour
- 1 Tsp Baking Soda
- 1/2 Tsp Baking Powder
- 1/4 Tsp Salt
- 1 Cup Chocolate Chips
- 1-3 Tbsp Milk of Choice (if needed)
- Preheat oven to 375 degrees and prepare a baking sheet with cooking spray.
- Mix coconut oil until whipped consistency. Add in sugar, mashed banana, and vanilla and mix until combined.
- Mix in flour, baking soda, baking powder, and salt until combined. Add in milk if dough is dry.
- Fold in chocolate chips.
- Scoop cookie dough onto baking sheet and bake for 9-11 minutes.
- Allow cookies to set on a baking sheet and enjoy!
