The BEST Fall Cookie
Yes, I said the best. Cookies are always delicious, no matter what season but, these caramel apple cookies have a fun fall spin and will satisfy your sweet tooth. This is like an apple pie in a cookie and it melts in your mouth.
Caramel Apple Oatmeal Cookies (Makes 4 dozen)

1 ½ cups whole wheat flour

1 ½ cups old-fashioned rolled oats

1 tsp baking powder

½ tsp baking soda

½ tsp salt
-
½ cups sugar
-
½ cups packed brown sugar

6 TBSP unsalted butter (softened)

2 tsp vanilla extract
-
1 egg
-
¾ cup finely chopped apples
-
16 soft caramel candies chopped or ¾ cup caramel chips
Directions
- Preheat oven to 350.
- Combine flour, oats, baking powder, baking soda, and salt in a bowl.
- Mix sugars and butter in a separate large bowl and beat on medium speed. Add vanilla and egg. Gradually add flour mixture.
- Fold in apples and caramels.
- Drop dough by 2 teaspoonfuls on a baking sheet lined with parchment paper. Flatten balls lightly with hand and bake for 9 minutes.
- Cool on pan for 3 minutes and remove to wire rack. Enjoy!
