Plant-Based Energy Bites

Need a quick pick me us? This nutrient-packed bites will help you power through the day. Energy bites are the perfect snack to eat on the go, at work, at school, or just while you’re binging your favorite TV show. Not only are these plant-based and full of natural ingredients, but they are also perfect to eat when you have a sweet tooth! Plus – the whole family will enjoy them. Win-win!


  • 1/2 cup cashew butter
  • 1/2 cup almond butter
  • 1/2 cup chopped dates
  • 1 tbsp flax seeds
  • 1 tbsp chia seeds
  • 2 tsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 – 1 cup shredded coconut (for rolling)
  • Optional: add cacao nibs, raisins, or pistachios for extra flavor or crunch
  • Optional: switch out different nut/seed butter and extract flavors


  1. Blend cashew butter, almond butter and, chopped dates in a blender
  2. Add flax seeds, chia seeds, lemon juice, and, vanilla to the mix and blend until combined
  3. Line a container with parchment paper. Separate and roll mixture into 1-inch balls
  4. Roll balls in shredded coconut and place in the container.
  5. Store the container in your fridge and keep enjoying throughout the week!
