Lunch Meal Prep Recipe: Southwest Rice Bowl

Southwest Rice Bowls

INGREDIENTS

  • 12 ounces chicken breast (cut into 2 inch pieces)
  • 2 cups cooked rice
  • 1 cup black beans
  • 1 cup corn
  • ½ cup fire-roasted diced tomatoes
  • ½ cup chopped onion
  • ½ cup chopped green pepper
  • 1 tsp lime juice
  • 1 tsp garlic powder
  • 3 tsp taco seasoning
  • 1 tsp cilantro
  • Optional: chopped avocado, shredded cheese, plain greek yogurt

DIRECTIONS

  1. Season the meat with 1 tsp taco seasoning, salt, and pepper. Cook in a skillet over medium-high heat until done. Set aside.
  2. Heat 1 tbsp olive oil in the skillet over medium heat. Add onion and green pepper. Cook for 3 – 4 minutes until softened. Stir in 1 tsp taco seasoning to coat the vegetables.
  3. In the skillet, combine cooked rice, black beans, corn, diced tomatoes, lime juice, garlic powder, cilantro, and an additional 1 tsp taco seasoning. Mix well. Add the cooked meat back into the skillet and stir to heat through for 2–3 minutes.
  4. Serve and enjoy!!
