Various fruit frozen into ice cubes

One of the best parts of summer is enjoying all the fresh produce from your own garden and local markets! But sometimes it can be hard to use up all the fruits or herbs you purchased or grew. Instead of throwing them away, freeze them into ice cubes! Freezing fruit into ice cubes is a great way to make drinking water a bit more enjoyable, and herbs can be frozen in water or olive oil and used to add to drinks, in soups, for sautéing, and more!

Freezing Herbs
  1. Select the herbs you want to freeze. Wash them and let them air dry or pat them dry with a towel.
  2. Once dry, pull the leaves off the stem and chop larger leaves into small pieces. The smaller you cut them, the more you can fit into an ice tray or mold.
  3. In an ice tray, fill the cubes with your herbs. You can mix the herbs together or put single varieties in each cube. Try using silicon ice trays or fun-shaped molds, which make it easier to dislodge the ice. You can also use muffin tins.
  4. If you plan to put your frozen herbs in water, drinks, or brothy soups, fill your ice trays or molds with water. If you want to add herbs to hearty soups and stews or plan to sauté meats and vegetables, fill your trays with olive oil.
  5. Place your ice trays or molds in the freezer for two hours, or until the water or oil has frozen. They can stay in your freezer for up to 12 months.
  6. Pop them out whenever you want and enjoy!
