Chicken Salad on the go
2 cups cooked chicken (shredded or cubed)
1/3 cup chopped celery
1/4 cup chopped sweet onion
1/4 cup dried cranberries
2 tbsp slivered almonds
2 tbsp crushed pecans
1 small can mandarin oranges drained (8.25 ounces)
1/2 of a red pepper (diced)
1/4 cup mayo of choice
1/4 cup plain Greek yogurt
1 tbsp lemon juice
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1/4 tsp mustard powder
1 tsp dried dill
Toss together chicken, celery, onion, dried cranberries, almonds, pecans, mandarin oranges, and red pepper until combined.
In a separate bowl mix together mayo, Greek yogurt, lemon juice, salt, pepper, garlic powder, mustard powder, and dried dill until combined.
Add mayo and yogurt mixture into the chicken mixture and combine.
Enjoy on its own or eat with bread, crackers, or lettuce wraps!
