Healthy Gingerbread… Bread

There’s nothing better during cold weather and holidays than curling up on the couch, snuggling in your favorite blanket and enjoying a sweet treat. This sweet treat is sure to be a winter favorite plus lots of added nutrients!

Healthy Gingerbread Bread and Maple Glaze

  • 2 cups whole wheat flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tbsp ginger
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 2 eggs
  • 2 tbsp melted coconut oil
  • 2 tsp vanilla
  • 3/4 cup Greek yogurt or applesauce
  • 1/4 cup maple syrup
  • 1/4 cup molasses
  • 3 tbsp milk or milk substitute
Glaze
  • 3 tbsp greek yogurt
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla
Directions
  1. Preheat oven to 325 degrees and grease 9×5 bread pan
  2. Whisk together dry ingredients in a large bowl (flour, baking soda, baking powder, salt, and spices)
  3. In another bowl, mix wet ingredients (eggs, coconut oil, vanilla, yogurt/applesauce, maple syrup, molasses, and milk)
  4. Mix wet ingredients into the dry ingredients just until combined (do not over mix)
  5. Spread the mix into the bread pan and bake for 40-45 minutes or until an inserted toothpick comes out clean
  6. For the glaze- mix yogurt, maple syrup, and vanilla
  7. Top freshly baked loaf with maple glaze and enjoy!
