There’s nothing better during cold weather and holidays than curling up on the couch, snuggling in your favorite blanket and enjoying a sweet treat. This sweet treat is sure to be a winter favorite plus lots of added nutrients!
Healthy Gingerbread Bread and Maple Glaze
- 2 cups whole wheat flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tbsp ginger
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 2 eggs
- 2 tbsp melted coconut oil
- 2 tsp vanilla
- 3/4 cup Greek yogurt or applesauce
- 1/4 cup maple syrup
- 1/4 cup molasses
- 3 tbsp milk or milk substitute
Glaze
- 3 tbsp greek yogurt
- 1 tbsp maple syrup
- 1/2 tsp vanilla
Directions
- Preheat oven to 325 degrees and grease 9×5 bread pan
- Whisk together dry ingredients in a large bowl (flour, baking soda, baking powder, salt, and spices)
- In another bowl, mix wet ingredients (eggs, coconut oil, vanilla, yogurt/applesauce, maple syrup, molasses, and milk)
- Mix wet ingredients into the dry ingredients just until combined (do not over mix)
- Spread the mix into the bread pan and bake for 40-45 minutes or until an inserted toothpick comes out clean
- For the glaze- mix yogurt, maple syrup, and vanilla
- Top freshly baked loaf with maple glaze and enjoy!
