Cauliflower Breaded Chicken Nuggets

Can you really watch anything without snacking?! I think not. Who doesn’t love warm, crispy chicken tenders? And even better, you can sneak in a serving of veggies with these chicken nuggets.


  • 2 lbs chicken tenderloins cut in half
  • 2 egg
  • 2 cups riced cauliflower
  • 1 cup panko bread crumbs (for gluten-free option use gluten-free flour)
  •  1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder


  1. Preheat oven to 350 degrees and line baking sheet with parchment paper
  2. Whisk eggs in a small bowl (add in a pinch of salt and pepper)
  3. In a larger bowl, combine panko crumbs (or flour), riced cauliflower and spices
  4. Salt and pepper chicken tenderloins and cut. Then, dip each piece in the egg and coat in the cauliflower breading. After each piece has been dipped and breaded place on baking sheet
  5. Bake for 25 minutes, turning pieces over after 15 minutes
  6. Enjoy with your favorite dip
