Who doesn’t enjoy fruit pizza at a potluck or cookout with friends and family? This healthy version is sure to be a hit with everyone and still satisfy your need for dessert! Bake this for your next party and you’ll have everyone asking you for the recipe!
Ingredients
Cookie Base
- 2 Cups Oat Flour
- 1/2 cup Almond or Coconut Flour
- 1/2 Tsp Baking Soda
- 1/2 Tsp Baking Powder
- 1/8 Tsp Salt
- 1 Egg
- 1 1/2 Tsp Vanilla
- 2 Tbsp Coconut Oil
- 1/4 Cup Maple Syrup, Honey or Agave
Topping
- 4 oz Softened Low-fat Cream Cheese
- 1/2 cup Vanilla Yogurt (Greek or Regular)
- 2-3 Tbsp Maple Syrup, Honey, or Agave
- 1 Tsp Vanilla
- 1/4 Tsp Cinnamon
Fruit
- 3/4 Cup Blueberries
- 3/4 Cup Chopped Strawberries
- 1/2 Cup Chopped Banana
- Other fruit if desired
Directions
- Preheat oven to 350 degrees and grease a cookie sheet
- Mix together dry ingredients, then add all wet ingredients until combined
- Roll the dough into a ball and even roll out onto greased cookie sheet
- Bake for 15 minutes or until gold
- While crust bakes, mix together topping ingredients in a food processor or with a hand mixer
- Let crust cool and frost the entire top
- Decorate with fruit and voila! Take your fruit pizza to share with friends and family!
