Healthy Peppermint Bark Recipes

Need an easy-to-make sweet treat to gift to friends and family during the holidays? These recipes are a healthy spin on peppermint bark and SO EASY to make! You can even whip up a large batch and store it in the freezer for easy snacking and gifting all month long.


 

PEPPERMINT YOGURT BARK

 

Ingredients

  • 2 cups plain Greek yogurt
  • 1/3 cup honey
  • 1-2 tsp peppermint extract
  • Toppings: white chocolate chips, crushed candy canes, sprinkles, pretzels, etc.
  • Tip: add a scoop of vanilla protein for extra protein!

Directions

  1. Line a baking sheet with parchment paper.
  2. In a bowl, mix the yogurt, honey, and extract.
  3. Spread evenly over the top of the parchment paper and add toppings.
  4. Freeze for at least four hours. Break apart and keep in a freezer-safe bag.

 

 

CHOCOLATE PEPPERMINT PROTEIN BARK

 

Ingredients

  • ½ cup melted coconut oil
  • 2 scoops chocolate protein powder
  • 2 Tbsp honey
  • 1 Tbsp cocoa powder
  • 2 tsp mint extract
  • Toppings: chocolate chips, crushed candy canes, dried fruit, nuts, pretzels, etc.

Directions

  1. Line a baking sheet with wax paper.
  2. In a bowl, mix the oil, protein powder, honey, cocoa powder and extract.
  3. Spread evenly over the top of the parchment paper and add toppings.
  4. Freeze for at least two hours. Break apart and keep in a freezer-safe bag.
