Healthy Peppermint Bark Recipes

Need an easy-to-make sweet treat to gift to friends and family during the holidays? These recipes are a healthy spin on peppermint bark and SO EASY to make! You can even whip up a large batch and store it in the freezer for easy snacking and gifting all month long.
PEPPERMINT YOGURT BARK
Ingredients
- 2 cups plain Greek yogurt
- 1/3 cup honey
- 1-2 tsp peppermint extract
- Toppings: white chocolate chips, crushed candy canes, sprinkles, pretzels, etc.
- Tip: add a scoop of vanilla protein for extra protein!
Directions
- Line a baking sheet with parchment paper.
- In a bowl, mix the yogurt, honey, and extract.
- Spread evenly over the top of the parchment paper and add toppings.
- Freeze for at least four hours. Break apart and keep in a freezer-safe bag.
CHOCOLATE PEPPERMINT PROTEIN BARK
Ingredients
- ½ cup melted coconut oil
- 2 scoops chocolate protein powder
- 2 Tbsp honey
- 1 Tbsp cocoa powder
- 2 tsp mint extract
- Toppings: chocolate chips, crushed candy canes, dried fruit, nuts, pretzels, etc.
Directions
- Line a baking sheet with wax paper.
- In a bowl, mix the oil, protein powder, honey, cocoa powder and extract.
- Spread evenly over the top of the parchment paper and add toppings.
- Freeze for at least two hours. Break apart and keep in a freezer-safe bag.
