Cook dinner for someone special this month! Whether you’re cooking for that special someone, having dinner with a friend, or treating yourself, it deserves to be good. This dinner is perfect any time of the year but even better for a special night in. With fresh, whole ingredients and delicious flavors, you can’t go wrong!

 

Ribeye Steak

Ingredients

  • 1 lb ribeye steak
  • 4 Tbsp olive or avocado oil
  • 1 tsp rosemary
  • 1 tsp thyme
  • 2 tsp minced garlic
  • ¼ tsp salt
  • ¼ tsp pepper

Directions

  1. Cut the steak into 1-inch pieces. Sprinkle evenly with salt and pepper.
  2. In a small bowl combine 2 Tbsp oil, rosemary, thyme, and garlic.
  3. Heat a large skillet over medium-high heat. Once the skillet is preheated, add 1-2 Tbsp olive oil. Add steak and stir occasionally for 2-3 minutes.
  4. Baste the steak bites with the oil mixture and cook for an additional 1-4 minutes, depending on how you like your steak cooked.
  5. Serve and enjoy!

 

Roasted Parmesan Lemon Garlic Potatoes

Ingredients

  • 3 medium yellow potatoes
  • 2 Tbsp olive oil
  • 1 ½ tsp minced garlic
  • 1 ½ tsp lemon juice
  • 2 tsp honey
  • 1 tsp parsley
  • ¼ tsp salt
  • ¼ tsp pepper

Directions

  1. Preheat the oven to 350 degrees and spray a baking sheet with cooking spray.
  2. Thinly slice all the potatoes and spread them evenly on the baking sheet.
  3. In a small bowl, mix together the olive oil, garlic, lemon juice, honey, and spices. Brush about half the mixture over the potatoes.
  4. Roast the potatoes for 30 minutes. Remove potatoes from the oven and brush the rest of the mixture over the potatoes.
  5. Roast for 30 more minutes (total roasting time of one hour).
  6. Serve and enjoy!

 

Green Beans

Ingredients

  • 2 cups green beans (cleaned and trimmed)
  • 4 Tbsp butter or olive oil
  • 1 Tbsp Worcestershire sauce
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper

Directions

  1. Cook green beans for 3 minutes in a large pot of boiling water. Drain beans completely.
  2. In a large skillet over medium heat, add butter or olive oil. Add green beans, Worcestershire sauce, garlic powder, salt, and pepper, and toss to coat with oil and seasonings.
  3. Cook for 5-6 minutes, stirring occasionally, and cook until soft.
  4. Serve and enjoy!
