Apple Pie Overnight Oats

As the crisp autumn air rolls in, there’s no better way to start your morning than with a cozy, nutrient-packed breakfast. This healthier Apple Pie Overnight Oats recipe combines all the warm, spiced flavors of fall into an easy-to-make dish. With the perfect blend of oats, cinnamon, and fresh apples, this breakfast will fuel your day while satisfying those seasonal cravings!

INGREDIENTES

Apple Pie Filling

  • 4 cups apples
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 teaspoon sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon nutmeg
  • Pizca de sal
  • ¾ cup water

Oatmeal Layer

  • 2 cups old fashioned oats
  • 3 cups unsweetened cashew milk (you can also use almond or skim milk)
  • 1.5 teaspoon cinnamon
  • 3 teaspoons maple syrup

Yogurt Layer

  • 3 cups plain non-fat Greek yogurt
  • 3 teaspoons cinnamon sugar

INSTRUCTIONS

Apple Pie Filling

  1. Peel, core, and dice the apples.
  2. Add the diced apples to a large frying pan with the cinnamon, sugar, vanilla, cornstarch, nutmeg, cloves, and salt.
  3. Stir to coat the apples with the spices, and then add the water.
  4. Cook the apple mixture for 10 minutes, stirring frequently.
  5. The apples should be tender, but not soft. Let the sauce thicken slightly, similar to apple pie filling.
  6. Remove from the heat and set aside to cool.

Oatmeal Layer

  1. To each mason jar or serving container, add 1/3 cup of oats, 1/2 cup of milk, 1/4 tsp cinnamon and 1/2 tsp of the maple syrup.
  2. Stir to combine.

Yogurt Layer and Assembly

  1. Add 1/4 cup of the cooked apples on top of the oatmeal layer of each jar.
  2. In a large bowl, combine the yogurt with the cinnamon and cinnamon sugar.
  3. Add 1/2 cup of the yogurt mixture to each mason jar.
  4. Add another 1/4 cup of the apple filling on top of the yogurt layer in each jar.
  5. Store the mason jars in the refrigerator overnight and enjoy the next morning!
