The BEST Fall Cookie

Yes, I said the best. Cookies are always delicious, no matter what season but, these caramel apple cookies have a fun fall spin and will satisfy your sweet tooth. This is like an apple pie in a cookie and it melts in your mouth.

Caramel Apple Oatmeal Cookies (Makes 4 dozen)
  • 1 ½ cups whole wheat flour
  • 1 ½ cups old-fashioned rolled oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½  cups sugar
  • ½ cups packed brown sugar
  • 6 TBSP unsalted butter (softened)
  • 2 tsp vanilla extract
  • 1 egg
  • ¾ cup finely chopped apples
  • 16 soft caramel candies chopped  or ¾ cup caramel chips
Directions
  1. Preheat oven to 350.
  2. Combine flour, oats, baking powder, baking soda, and salt in a bowl.
  3. Mix sugars and butter in a separate large bowl and beat on medium speed. Add vanilla and egg. Gradually add flour mixture.
  4. Fold in apples and caramels.
  5. Drop dough by 2 teaspoonfuls on a baking sheet lined with parchment paper. Flatten balls lightly with hand and bake for 9 minutes.
  6. Cool on pan for 3 minutes and remove to wire rack. Enjoy!
